Our winery is open to innovations, and we are constantly looking for discoveries. That is exactly how we created our premium wines through successful experiments. Mzis tvali also presents a 11-year aged chacha.
 

Golden

Our golden is a white dry Rkatsiteli wine made in Qvevri from Kardandakhi in the Kalandadze winery.
 
The grapes are harvested at the end of the vintage when grapes' sugar content and alcohol-making potential are at their maximum. Wine goes through fermentation at 24-25°C, which allows the wild yeasts to give the wine aromas and richness. After the fermentation, the wine is aged for one year on chacha, which gives the wine smoothness. After aging, we take the chacha off and filter the wine using natural technology (wine decanting and sediment removal). Then we transfer it to the cistern and let it settle. Half of the wine is transferred into the oak barrel and the other half back to the Qvevri, where we add the grape seeds. We age both of them separately for three years. By this time, the wine had finally developed its golden color and long-lasting aromas. Finally, we mix the wine from Qvevri with the wine from an oak barrel, where the wine goes through its last stage before bottling.

White dry

ROSE

Our Rosé is a dry wine aged in a Qvevri from Kardanakhi in the Kalandadzei winery.

At first, we place Khikhvi and Mtsvane juices together in a cistern. In 1 week, when the flavors have already mixed well, we transfer it to Qvevri, which is filled 90% with juice, and 10% with Saperavis chacha. Here, the wine continues fermentation and develops new flavors and pink color from Saperavi. We age the wine in Qvevri with chacha for seven months. After aging, we take the chacha off and filter the wine using natural technology (wine decanting and sediment removal). We transfer the wine to a cistern and let it settle for a month, so the color clears and turns into a peach color. Finally, we pour it into bottles and age it for a minimum of two years.

Chacha

Our Chacha is distilled traditionally from Saperavi and Rkatsiteli grapes in the Kalandadze winery. 
 
Our Chacha is distilled traditionally from Saperavi and Rkatsiteli grapes in the Kalandadze winery. It is double distilled. Chacha gets its unique taste and outstanding dark coloring from being aged for five years in an oak barrel. Finally, it's aged bottled for another six years. This chacha is the first product created by Mzis Tvali, which is the same age as our Winery.
